Caramel Popcorn Cupcake recipe
These Caramel Popcorn Cupcakes are full of caramel popcorn flavor! It starts with a soft caramel cupcake mixed with finely crushed caramel popcorn. And if you really like caramel, you can even crown it: fill the cupcake with caramel!
Caramel cupcakes are one of the easiest cupcake recipes, as they are ready in just under an hour.
Preheat the oven to 180°C. Place muffin papers in the baking dish or in the baking tray, but you can also butter the muffin baking dish.
Place 15 dkg of butter and 20 dkg of brown sugar in a mixing bowl and beat with an electric mixer until light and fluffy. Gradually stir in the eggs, and when it becomes smooth, add the flour and half of the caramel sauce.
If you really like popcorn, add crushed salted-caramel popcorn to the dough. Crush a handful and mix it into the dough.
Add the baking powder and vanilla extract. Work the dough well. Fill each muffin tin or paper three-quarters full, then bake the dough for 20-25 minutes until golden brown.
To make the frosting on top of the cupcakes, place the butter and powdered sugar in a mixing bowl, add 2 tablespoons of hot water, and mix until smooth and creamy. Gradually add the remaining caramel.
Put the mixture in a piping bag and decorate the cupcakes. Sprinkle salted-caramel popcorn on top and sprinkle with a few drops of caramel sauce.
