Yes, you read the title correctly 😁 POPCORN SALAD. Gnawing after dinner? Well, no, then you'd better combine dinner with munching. 😉
- 10 slices of bacon
- ¾ cup mayonnaise
- 1 cup diced celery
- 1 ¼ cups shredded Cheddar cheese, divided
- ¼ cup shredded carrots
- 2 tablespoons minced fresh chives
- 6 cups of fresh popcorn (Grain pop popcorn)
Place the bacon in a large, deep pan. Fry over medium heat until brown evenly. Drain, crush and set aside.
Mix the ingredients in a large bowl, but set aside as much of the bacon and cheese as you sprinkle at the end. Mix well. Add popcorn and stir.
Sprinkle with the remaining cheese and bacon and serve immediately.
We really like making it and taking it on family trips, the boys love it too!
